Quick Chicken Salad

Need something quick for lunch or supper? Try this:

about 2 cups of leftover chicken (cooked, obviously)
1/2 c mayonaisse
1 Tbsp dijon mustard
a couple of tbsp diced fresh herbs 
a couple of grinds of fresh pepper
Mix everything together and voila! This is a great weeknight supper idea because it’s easy to prep, requires no cooking and can be tossed together in, like, a minute.
